What to do with a case of Rice Krispies… make Scotcheroos of course.

I love recipes that are easy to remember. A cup a cup a cup.  No baking required even better !!  Scotcheroos are my go to lazy day cookie, a little stirring and some microwave skills and zap you have a sweet snack.

Scotcheroos 

Ingredients ~

  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup peanut butter  *for chewy cookies add another 1/2 cup
  • 6 cups rice krispies
  • ½ bag chocolate chips
  • ½ bag butterscotch chips

Directions ~ 

Cookie:

Heat corn syrup and sugar over medium heat.  Stirring frequently until sugar dissolves. Remove from heat.

Mix in peanut butter

Stir in rice krispies.

Press mixture into parchment paper lined cookie sheet or pan.

Frosting: 

Melt chocolate chips and butterscotch chips together

Spread evenly over cookies

Once cooled cut into shape of choice
