I love a simple snack ! During the late summer early fall blueberries are abundant in the tundra. During the winter if the stores have a good sale I'm all about some blue snacks.
Ingredients:
Muffins
1 1/2 Cups Flour
3/4 Cup Sugar
½ tsp Salt
2 tsp baking powder
1/3 Cup Vegetable Oil
1 Egg
1/3 ish Cup Milk
1 Cup Blueberries
Topping
1/2 Cup White Sugar
1/3 Cup Flour
1/4 Cup butter
2 Tsp Cinnamon
Directions
Preheat oven to 400º Grease muffin cups or line with liners.
Combine flour, sugar, baking powder.
Place vegetable oil into a 1 cup measuring cup, add the egg and enough milk to fill the cup.
Mix this with the flour mixture.
Fold in blueberries.
Fill the muffin cups right to the top and sprinkle with crumb toppings.
**Crumb topping Mix together sugar, flour and cinnamon. Sprinkle over muffins before baking
Bake 20-25 min or until done
