Why oh why do I always buy so many cans of pumpkin….. well I know why I can’t pass up a sale. I always buy with good intentions of baking a ton of pies. After baking a few those intentions go right out the door and cans of pumpkin go on the pantry shelf for me to use slowly thru the year until the next sale comes along that I can’t pass up. Over the years I have found that pumpkin is not just for pies. Muffins are one of my favorite pumpkin snacks.
Ingredients:
1 1/3 C White Flour
2/3 C Wheat Flour
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
2 tsp Cinnamon
1 tsp Pumpkin Pie Spice
3 tbsp Vegetable Oil
1/2 C Honey
1 Egg
1/2 C Milk
1/2 C Pumpkin
1 Apple peeled and grated
Directions:
Mix together ~ All Dry Ingredients
Wisk together ~ All Wet Ingredients
Gently combine all ingredients. Remember the key to a fluffy muffin is to not over mix !
Bake at 350º in a preheated oven for 20 Min
