Sweet Potato Butternut Squash Soup


Spring is right around the corner in rural Alaska- time to make the most of my crockpot and make the final soups of the season. Not only is this recipe crazy easy it tastes amazing too !

There is something magical about combining sweet potatoes and butternut squash. Top with sour cream and bacon and your taste buds will love you.

Ingredients:

3 Sweet Potatoes

1 Butternut Squash

32 oz carton of Chicken Broth

2 Bell Red or Yellow Bell Peppers

Water

Seasoning of choice – Lemon Pepper, Nutmeg, Chili powder –use your imagination

Topping ideas: Sour Cream, Bacon, JalapeƱos

Directions:

In your crock pot combine:

Peeled and diced sweet potatoes and butternut squash

Chopped bell peppers

Chicken Broth

Water to cover

Cook on low 6-7 hours

Blend in batches to desired consistency *remember it’s very hot be careful !

Return to crock pot and add seasoning of choice
