Sweet Potatoes are not just for holiday dinner ! They are crazy healthy and super yummy not to mention so easy to work into your recipe binder. Sweet Potatoes mixed with black beans make a filling and tasty dinner. Even the vegetable hating eaters in my house LOVE this recipe.
Ingredients :
2 Sweet Potatoes
1 can black beans
1 cup salsa
1 package small flour tortillas (or corn if you prefer)
Sour Cream, Salsa, Guacamole ext for dipping
Directions:
Peel and dice potatoes. Arrange on a baking sheet and drizzle with olive oil. Bake at 400 º in a preheated oven for 20-30 min (until tender) turning once.

In a food processor blend cooked potatoes and beans until desired consistency. I left a few chunks of sweet potato.
Mix in salsa and spread tortillas evenly with mixture. 
Roll up and place back on baking sheet. Brush with olive oil and bake in preheated oven at 350º 15 min turning once.
Serve with dips of choice.
If you have any leftovers they store really well. I think they taste great right out of the refrigerator as a cool snack !
