When the pilots away ~ Cookies for breakfast


I am all for a balanced meal, but there are somedays that just call for cookies.  Cookies and lots of strong coffee !! Daddy is on an overnight flight so little man was in charge of our meal plan for the day. I am a firm believer in a free range learning, and somedays that leads to cookies for breakfast.

While some young adults don’t know how to boil water and are ready to leave home, my little guy baking cookies teaches life long skills. From measuring out ingredients to using caution when opening the oven (yeah there are some people I know that don’t know how to open the oven and take something out…. have you ever heard of a pot holder)  For all of you haters that think a kid shouldn’t use a hammer, or a knife, or learn how to do anything for themselves for fear that they might get hurt…BITE ME !

If you like chewy cookies with a crispy outside and like to break the rules and have cookies for breakfast these are the cookies for you.

Ingredients

Butter

1 Cup

Brown Sugar *packed

1 1/2 Cups

White Sugar

1/2 Cup

Eggs

2

Almond (or vanilla)

2 tsp

Flour

3 Cups

Baking Soda

1 tsp

Hot Water

2 tsp

Salt

1/2 tsp

Cream of tartar

1/2 tsp

Chocolate Chips

2 Cups

Preheat oven to 350
Cream together the butter, white sugar, and brown sugar until smooth.
Beat in the eggs one at a time, then stir in the almond.
Dissolve baking soda in hot water. Add to batter along with salt.
Stir in flour, cream of tartar, and chocolate chips.
Drop by large spoonfuls onto parchment covered baking sheets.
Bake for about 10 minutes in the preheated oven, or until edges are nicely browned

*While it’s tempting to let them bake longer, remove when they just turn brown or they will become hard and according to a three year old “yucky”

**Chill dough to make it easier to work with
