The pilot has had three 4am flights this week. My body is getting used to being up at this crazy hour so I have to find something to do when I can’t fall back asleep. Let the candy making commence !

Pumpkin Apple Muffins
Why oh why do I always buy so many cans of pumpkin….. well I know why I can’t pass up a sale. I always buy with good intentions of baking a ton of pies. After baking a few those intentions go right out the door and cans of pumpkin go on the pantry shelf for me to use slowly thru the year until the next sale comes along that I can’t pass up. Over the years I have found that pumpkin is not just for pies. Muffins are one of my favorite pumpkin snacks.

Happy Dance Bananas are on sale this week !!! In rural AK that means I got them for under $3 a lb and only half of them were crazy bruised from the trip North to Alaska …. The perfect staple to start some freezer smoothly packs.
Seed and Spice Delight
Checking the weather this afternoon it say’s it feels like 24 BELOW zero. I have to admit I agree it’s a little cold out. Compared to the last eleven winters I’ve spend in Rural Alaska; today is on the tropical side. Having seen it 60 below with wind chill today is long sleeve weather ! Still a great day to be inside baking up some healthy snacks.
A few weeks ago I made an order for supplies so I could bake up some snacks. One of the adventures of living in the Alaskan Bush you don’t just run to the local grocery store to pick up chia seeds. I managed to get to the post office during the two hours the window is open today and picked up my treasure box.  With the help of my assistant we baked up a batch of yummy snacks for the week.
Seed and Spice Crackers
- 1/2 Cup Chia Seeds
- 1/2 Cup Sunflower Seeds
- 1/2 Cup Pumpkin Seeds (Pepita Seeds)
- 1/2 Cup Sesame Seeds
- 1 Cup Water
- 3 tbsp Crushed Garlic ..or less if you don’t like the taste
- Dash of lemon pepper
- Dash of spice – I use Habanero Powder or Birds Eye Chili Power.
- Preheat oven to 325F
- Line baking sheet with parchment paper
- Mix the seeds together
- Add in water, garlic and spices of choice. Mix until thick
- Spread the mixture onto the prepared baking sheet
- Bake for 30 Min. Remove from oven and slice into crackers.
- Flip and Bake another 30 min
These taste great by themselves or served with hummus
